    Organic sparkling white wine

    Grape variety
    100% White Frontenac

    Crushed grapes undergo a short maceration with the skins of St-Pépin, La Crescent, and Brianna grapes. Fermentation is carried out using indigenous yeasts. Natural vinification is performed using ancestral methods, and the wine is aged on lees for 5 months. Unfined, unfiltered, and with no added sulfites.

    “At Domaine Oak Hill, we want to know what the northern vine says about our terroir, what it wants to produce from the fermentation of its grape juice on its own yeasts, and then we want to taste how it all looks in our glass… after taking proper care of it, in the field and in the cellar.
    How does the vine want to grow in our soil? How does it prefer to be pruned to find its balance growing here, to produce the right number of leaves needed to nourish and perfectly ripen its grapes? The vine tells us; we can only listen and learn from the consequences of our choices as humble apprentice winemakers, both good and bad.
