"Conventional viticulture takes land without giving much back. Organic viticulture gives back to the vineyard what it takes away. Biodynamic viticulture nourishes the land more than it harvests its fruits. We treat our vineyard as a living being. Nothing concerns us more than maintaining its biodiversity. Every care we give it is done with the intention of making it a sustainable ecosystem and, ultimately, a self-sufficient organism. Thus, 90% of our time is spent in the field. Experience has taught us that healthy grapes require minimal intervention in the winery. Supported by healthy indigenous yeasts, the wine will have everything it needs to express the individuality it has taken a whole season to develop."
