“Through the lens of the fruit we cultivate, we strive to present a true portrait of our terroir and each vintage. This is only possible by adopting a minimalist and natural approach in the winery. We allow time to do its work. Indigenous yeasts and bacteria always accomplish far more than we do, and we neither fin nor filter our wines nor our ciders. Since 2020, we have not used sulfites in any of our wines, although we acknowledge that we may need to use them again someday to help a wine that is becoming a little too assertive. Certainly, the quality of the finished product is essential, but it is not enough.”
