Winemaking
For this vintage, we wanted to return to a more traditional winemaking approach for our "Ces petits imprévus" cuvée. We therefore abandoned carbonic maceration (used on a certain percentage of the blend in the last four years) and returned to direct pressing of whole bunches without maceration. With the warm temperatures of October 2023, fermentation proceeded a little faster than usual, and the wine was bottled before the end of fermentation to produce a naturally sparkling wine using the ancestral method. This year, the effervescence, both generous and delicate, offers fine bubbles at a final pressure of 3.5 bars.
