Winemaking: natural fermentation, 5-day maceration for the Frontenac Gris, refermentation in the bottle with honey from the estate.
Aging: 10 months in stainless steel tank then 4 months in concrete egg.

“What motivates us is making the vineyard as self-sufficient as possible. Our philosophy leans towards biodynamics and agroforestry. We strive to create an environment conducive to biodiversity: living soil, gentle pruning of the vines, and minimal use of machinery in the plots, allowing natural flora to establish itself and reducing the use of fossil fuels by having our two horse companions, Julio and Jakelyne, contribute to various tasks in the vineyard.

During the winemaking process, we are very hands-off. Fining, filtration, and chaptalization are prohibited at the estate in order to express the full potential of our terroir.”
